For the Mushrooms & Spinach:

  • 1 tbsp organic olive oil
  • 1 organic onion, finely chopped
  • 3 cloves organic garlic, minced
  • 2 cups organic cremini mushrooms, sliced
  • 3 cups organic fresh spinach
  • 1/2 tsp organic red pepper flakes (optional)
  • 1/4 cup organic fresh basil, chopped

Instructions

  1. Cook the Pasta: Boil water in a large pot, add salt, and cook organic pasta according to package instructions until al dente. Drain and set aside.
  2. Make the Cashew Cream Sauce: Blend soaked organic cashews, organic almond milk, organic nutritional yeast, organic lemon juice, organic Dijon mustard, organic garlic, organic salt, and organic black pepper until completely smooth. Set aside.
  3. Sauté the Aromatics & Mushrooms: In a large pan, heat organic olive oil over medium heat. Add organic onions and cook for 3-4 minutes. Stir in organic garlic and sliced organic mushrooms, cooking for 5-7 minutes until mushrooms are browned and soft.
  4. Add the Spinach: Stir in organic spinach and cook for another 2 minutes until wilted.
  5. Combine Everything: Reduce heat to low, pour in the creamy cashew sauce, and stir to combine. Let the sauce warm through for 2-3 minutes.
