Though far from completely over, the Covid-19 pandemic appears to be slowing down as immunization efforts continue to ramp up. A dwindling pandemic and the imminent arrival of a new season brings plenty to celebrate. Here is a protein packed, nutrient-full green smoothie to represent the arrival of spring foliage and a healthy and happy spring.
Ingredients
Vegan Green Power Smoothie
- 1 cup unsweetened almond or soy milk
- 1-2 handfuls of spinach
- 2 frozen bananas
- 2-4 soft pitted dates
- 2 tbsp hemp hearts
- 1 tbsp natural peanut butter
- 2 ice cubes
Superfood Topping (Optional- This is up to you!)
- 2 tbsp hemp seeds
- 2 tbsp chia seeds
- 2 tbsp raw buckwheat groats
- 2 tbsp slivered almonds (or pumpkin seeds)
Instructions
Vegan Green Power Smoothie
- Combine all ingredients into a blender, blend on high power until smooth and all course bits have been ground out.
Optional Superfood Topping
- Simply sprinkle on top and enjoy! (If too coarse for your liking, grind with a mortar and pestle before adding to the smoothie)
