Ingredients
For the Pasta:
- 12 oz (340g) organic whole wheat spaghetti or your favorite vegan pasta
- Salt, for boiling water
For the Primavera Sauce:
- 2 tablespoons organic extra virgin olive oil
- 3 cloves organic garlic, minced
- 1 organic red onion, thinly sliced
- 1 organic bell pepper (any color), thinly sliced
- 1 organic zucchini, sliced into half-moons
- 1 cup organic cherry tomatoes, halved
- 1 cup organic broccoli florets
- 1 cup organic baby spinach leaves
- 1 teaspoon organic dried basil
- 1 teaspoon organic dried oregano
- Salt and black pepper, to taste
For Garnish:
- Fresh organic basil leaves, chopped
- Organic nutritional yeast or vegan Parmesan cheese (optional)
Instructions
1. Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, reserving a cup of pasta water, and set aside.
2. Prepare the Vegetables:
- In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
- Add sliced red onion and bell pepper to the pan. Cook until they start to soften, about 3-4 minutes.
- Add zucchini, cherry tomatoes, and broccoli florets. Cook for another 5-6 minutes until the vegetables are tender yet still crisp.
- Stir in the baby spinach and let it wilt. Season with dried basil, dried oregano, salt, and black pepper. Toss well to combine.
3. Combine Pasta and Primavera Sauce:
- Add the cooked pasta to the pan with the primavera sauce. Toss gently to combine, adding a splash of reserved pasta water if needed to loosen the sauce and help it cling to the pasta.
4. Garnish and Serve:
- Remove from heat and garnish the pasta with fresh chopped basil.
- Optionally, sprinkle with organic nutritional yeast or vegan Parmesan cheese for a cheesy flavor.
- Serve hot, and enjoy your delightful organic Italian vegan pasta primavera, bursting with fresh flavors and colorful vegetables!
