Ingredients

For the Pasta:

  • 12 oz (340g) organic whole wheat spaghetti or your favorite vegan pasta
  • Salt, for boiling water

For the Primavera Sauce:

  • 2 tablespoons organic extra virgin olive oil
  • 3 cloves organic garlic, minced
  • 1 organic red onion, thinly sliced
  • 1 organic bell pepper (any color), thinly sliced
  • 1 organic zucchini, sliced into half-moons
  • 1 cup organic cherry tomatoes, halved
  • 1 cup organic broccoli florets
  • 1 cup organic baby spinach leaves
  • 1 teaspoon organic dried basil
  • 1 teaspoon organic dried oregano
  • Salt and black pepper, to taste

For Garnish:

  • Fresh organic basil leaves, chopped
  • Organic nutritional yeast or vegan Parmesan cheese (optional)

Instructions

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, reserving a cup of pasta water, and set aside.

2. Prepare the Vegetables:

  • In a large pan, heat the olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
  • Add sliced red onion and bell pepper to the pan. Cook until they start to soften, about 3-4 minutes.
  • Add zucchini, cherry tomatoes, and broccoli florets. Cook for another 5-6 minutes until the vegetables are tender yet still crisp.
  • Stir in the baby spinach and let it wilt. Season with dried basil, dried oregano, salt, and black pepper. Toss well to combine.

3. Combine Pasta and Primavera Sauce:

  • Add the cooked pasta to the pan with the primavera sauce. Toss gently to combine, adding a splash of reserved pasta water if needed to loosen the sauce and help it cling to the pasta.

4. Garnish and Serve:

  • Remove from heat and garnish the pasta with fresh chopped basil.
  • Optionally, sprinkle with organic nutritional yeast or vegan Parmesan cheese for a cheesy flavor.
