Short Description:
A sweet vegan snack (thanks to the dates!) that will give you a boost of energy without the refined sugar crash!
Recipe:
In a food processor fitted with the S blade, process dates until a paste is formed. Add walnuts and vanilla and continue processing until mixture is uniform.
Form mixture into balls and roll through coconut shreds until fully coated.
Ingredients:
- 2 cups pitted dates
- 1 1/4 cup walnuts
- 1/4 tsp vanilla
- 1/4 cup shredded coconut
