Mashed Chickpea Salad

Organic delicious mashed chickpea salad by Living JuiceShort Description: 

A perfect healthy, light dip for adding on top of toast or enjoying on its own. This tasty treat can be made into a delicious lunch or snack with any organic, cold-pressed Living Juice! 

 

 

 

 

 

Ingredients:

  • 1 shredded organic carrot 
  • 1 can of organic chickpeas
  • 2 stalks organic celery 
  • 1/3 of a small apple (preferably green) 
  • 1/4 cup red onion
  • 1/2 cup organic kale
  • 2 tablespoons fresh cilantro
  • 2-3  tablespoons of dijon 
  • 1/2 teaspoon minced garlic 
  • 1/2 of an organic lemon, juiced 
  • 1 1/2 tablespoons sunflower seeds
  • Sea salt and pepper to taste

Recipe:

Mash chickpeas until blended, but not until smooth. 

Put chickpeas into a larger bowl, add other ingredients and mix together.
